Udon Meal Prep - Microwave Recipe

A simple udon meal prep, this microwave recipe takes just minutes to prepare and is ready whenever you want it!

 

This recipe will make four servings of a flavor-packed mushroom and vegetable udon noodles, all of which can be made in containers and stored in the fridge or freezer until you are ready to microwave and eat! It packs a lot of umami and a range of tastes thanks to the sauce used to season everything. A mixture of Lee Kum Kee Panda Brand Oyster Sauce and Premium Soy Sauce serves as the base for this rich and savory sauce, which accentuates the mushrooms and vegetables to uplift their natural tastes. This is great with a drizzle of Lee Kum Kee Chili Crisp Original to garnish, adding crunchy textures, savory heat, and garlicky flavors.

How to make it

  1. Heat oil in a skillet over medium-high heat. Add mushrooms and cook until deeply browned, 5–6 minutes. Remove from heat and let cool slightly.
  2. In a small bowl, whisk together Lee Kum Kee Minced Garlic, Lee Kum Kee Minced Ginger, Lee Kum Kee Panda Brand Oyster Flavored Sauce, Lee Kum Kee Premium Soy Sauce, Lee Kum Kee Pure Sesame Oil, sugar, and water to make a sauce.
  3. Prepare noodles:

    • For Vacuum-sealed udon (shelf-stable, not frozen): Loosen under warm water or microwave the sealed pack 30–60 seconds just to separate. Do not fully cook.
    • For Frozen udon: Rinse under warm water or briefly dip in hot water just until separated. Do not fully boil.

    Divide noodles evenly into 4 meal prep containers.

  4. Top noodles with bok choy, cooked mushrooms, and pour the sauce evenly over each portion. Finish with green onions and sesame seeds. Let cool completely, then seal and refrigerate.
  5. When ready to eat, add 1–2 Tbsp water, cover loosely, and microwave 1–2 minutes until hot. Toss well so the sauce coats the noodles and lightly wilts the bok choy. Finish with Lee Kum Kee Chili Crisp Original
