How to make it

  1. In a small bowl, combine water, cornstarch, sugar, dry sherry and Black Bean Garlic Sauce to create a sauce mixture. Mix well and set aside
  2. In a heated pan, add oil and stir fry pork until browned and well done. Add in ginger and eggplant, cook for another 5 minutes.
  3. Add sauce mixture and cook until sauce thickens.
