Longevity Noodles are an essential Lunar New Year Recipe to ring in long life for the new year. This version gets an umami-packed upgrade with the addition of mushrooms.

 

It is said that the longer the noodles you use for this recipe, the longer and more prosperous life you are wishing for. That means it's essential to find the longest noodles possible to slurp at once to ensure the strongest wishes for a long life. To keep these noodles packed with flavor, you'll want to use a natural pairing with the umami of the mushrooms - Lee Kum Kee Premium Oyster Sauce. This forms the core of the longevity noodle sauce alongside Premium Soy Sauce for layers of umami and aroma. Don't forget a little extra spice with the help of Chiu Chow Style Chili Crisp Oil

How to make it

  1. Boil noodles according to package instructions. Drain, rinse under cold water to stop cooking and remove excess starch, then drain thoroughly. Set aside.

  2. In a small bowl, whisk together Lee Kum Kee Premium Soy Sauce, Lee Kum Kee Premium Oyster Sauce, and sugar until combined.

  3. Heat oil in a large pan or wok over high heat. Add oyster mushrooms and sear until golden, about 3 minutes. Add shiitake mushrooms and cook 1–2 minutes until slightly softened. Reduce heat to medium and stir in Lee Kum Kee Minced Garlic and Lee Kum Kee Minced Ginger. Cook for 1-2 minutes or until softened and aromatic.  Pour in Shaoxing wine and stir to deglaze the pan.

  4. Add cooked noodles and toss a few times. Drizzle the sauce over noodles. Stir and cook until noodles are evenly coated and heated through.

  5. Add garlic chives (or green onions) and stir 1–2 minutes until wilted. Transfer to a serving platter and garnish with a generous drizzle of Lee Kum Kee Chiu Chow Chili Crisp Oil. Serve immediately and enjoy.
