While a normal loaded baked potato recipe can take up to 45 minutes to make, you can cut the time down to just 15 minutes thanks to this quick baked potato recipe hack that involves "baking" your potato in the microwave. 


That's because the microwave cooks a potato faster than the oven, needing just 10 minutes in the microwave to reach a fully cooked and fluffy texture. From there, you can add all the classic toppings like cheese and bacon, plus some extra heat and umami from a drizzle of Lee Kum Kee Sriracha Mayo. Loaded baked potatoes just got a whole lot easier and faster to make!

How to make it

  1. Wash and dry the potato. Pierce the skin several times with a fork. Place on a microwave-safe plate and microwave on high for 8–10 minutes, flipping halfway through. Check for doneness with a knife.
  2. Slice the potato lengthwise and fluff the inside with a fork. Top with shredded cheese, allowing the heat from the potato to melt the cheese. Add a dollop of sour cream.
  3. Drizzle generously with Lee Kum Kee Sriracha Mayo. Garnish with sliced green onions and bacon bits. Enjoy!
