Have hot pot whenever you want with just 10-15 minutes of cook time, thanks to this frozen hot pot meal prep recipe! 

 

This meal prep can be customized however you like, but for a starter kit, this version uses vegetables like Napa cabbage and bok choy, enoki mushroom beef rolls, tofu, and a flavorful marinade for the meat and veggies. This marinade, made with ingredients like Lee Kum Kee Premium Oyster Sauce and Premium Soy Sauce, brings out natural umami flavors to highlight every ingredient in the hot pot.

 

You'll get four portions of hot pot meal prep from this recipe, with one cup of a broth of choice needed for cooking. Don't forget sauces for dipping or drizzling! Lee Kum Kee Hoisin Sauce is a great choice that adds sweet and earthy notes.

How to make it

  1. Divide Napa cabbage, baby bok choy, and tofu evenly into four freezer-safe glass containers.
  2. Wrap small bundles of enoki mushrooms with the thinly sliced beef to create beef rolls and place them on top of the vegetables.

  3. In a small bowl, mix Lee Kum Kee Premium Oyster Sauce, Lee Kum Kee Premium Soy Sauce, Lee Kum Kee Minced Garlic, and Lee Kum Kee Minced Ginger. Spoon the sauce mixture into each container. Leave headspace, cover, and freeze.
  4. To cook, run the outside of the container briefly under warm water just until the frozen contents loosen. Invert the frozen hot pot pack directly into a pot of 1 cup boiling broth.

  5. Simmer 6–8 minutes until the beef rolls are cooked and vegetables are tender. Serve with Lee Kum Kee Hoisin Sauce on the side for dipping.
