An easier variation of the classic rolled kimbap, this folded kimbap recipe is a Korean inspired take on the "tortilla hack" that combines four ingredients into one delicious and quick lunch, with nori serving as the canvas. 

This version is a Spam kimbap, made with a glaze featuring Lee Kum Kee Premium Soy Sauce, and adds scrambled egg, fresh veggies, and Lee Kum Kee Sriracha Mayo to pack spicy, sweet, and umami flavors all into one simple meal. This is perfect for an on-the-go meal or something you can build in mere minutes if you're in a rush for meal prep!

How to make it

  1. Pan-fry the Spam slices over medium heat until golden brown on both sides, about 2-3 minutes per side.
  2. In a small bowl, mix the Lee Kum Kee Premium Soy Sauce, honey (or brown sugar), Lee Kum Kee Pure Sesame Oil, Lee Kum Kee Seasoned Rice Vinegarand water until combined. Pour over Spam and allow the sauce to simmer for about 1-2 minutes until it thickens slightly. Toss the Spam slices in the glaze, coating them evenly. Cook for an additional minute, allowing the sauce to caramelize on the Spam.
  3. Fold the kimbap: Place the seaweed sheet shiny side down on a clean surface. Make a vertical slit halfway through the center of the seaweed (this will allow for easy folding). Divide the nori into four imaginary quadrants.
  4. Assemble the layers:

    Quadrant 1 (Top left): Spread a thin layer of sushi rice.

    Quadrant 2 (Top right): Place the fried Spam slices and drizzle with Lee Kum Kee Sriracha Mayo Dressing/Spread.

    Quadrant 3 (Bottom right): Add the scrambled or fried egg.

    Quadrant 4 (Bottom left): Layer cucumber, sautéed carrot, and romaine lettuce.

  5. Starting from the bottom left (Quadrant 4), fold the nori over onto the bottom right (Quadrant 3), then fold it up onto the top right (Quadrant 2), and finally fold onto the top left (Quadrant 1) until you have a neat, folded square. Cut the folded kimbap in half if desired and serve with extra Lee Kum Kee Sriracha Mayo for dipping. Enjoy!
