Put all the marinade ingredients in a large bowl and mix thoroughly.
Cut the pork foreleg meat into 1-inch pieces. Put the meat into the marinade bowl from step 1 and marinate for 30 minutes.
Meanwhile, slice the onions into 0.2-inch slices and slice the leek diagonally.
Heat up a deep pan and add a drizzle of vegetable oil. Add the onions and sauté over medium heat for 1 minute. Add the marinated meat and sauté for 3 minutes. Add the leek and cook for 1 more minute.
