In a pot, put in water, green onion, ginger, and salt; then bring it to a a boil. Add the chicken and more boiled water until cover the chicken. Cook over medium heat for about 15-20 minutes until the chicken is cooked through.
Take out the chicken and submerge it in ice water. Drain and chop it into pieces. Set aside.
In a separate bowl, mix in the sauce mix ingredients, and pour it over the chicken. Sprinkle chopped peanuts, diced green onion and sesame over the top. Enjoy!
