Heat up a wok and pour cooking oil into it. Pan-fry the pork ribs until golden brown. Add ginger, garlic, and scallion to sauté.
Add Shaoxing cooking wine and let it cook for a while. And then, add water, other ingredients (except corn starch) and all the seasonings. Cover the wok with a lid and simmer for 50 minutes until the sauce starts to be absorbed. Place the ribs on a plate.
Add corn starch to thicken up the sauce in the wok. Pour the sauce over the pork ribs and ready to serve.
