How to make it

Toast the bread then spread the cranberry sauce on followed by  the spinach. 
Place down a few thin slices of red onion, then add thick slices of leftover turkey. Top with cheddar cheese and more cranberry sauce. 
Place the open faced sandwich into the broiler for a minute to melt the cheese. Then take out, top with a little Lee Kum Kee Sriracha Mayo followed by a piece of bread, cut and enjoy.
