Season chicken with salt and pepper on both sides then place into a bowl along with the Lee Kum Kee Lemongrass Chili Flavored Hoisin Sauce. Cover and let marinate for 30 minutes until ready to bake.

Preheat oven to 400°F, then grease a baking dish and set aside.

Chop up the potatoes and place into the dish and place the chicken on top.

Drizzle a little more Lee Kum Kee Lemongrass Chili Flavored Hoisin Sauce over and sprinkle in some fresh herbs (thyme, rosemary, etc.).

Bake for 25-30 minutes until chicken is cooked through and potatoes are fork tender.

Garnish with more fresh herbs if desired and serve right away.
