Preheat the oven to 425°F. Spray an 8 inch baking dish with nonstick cooking spray. Season both sides of the cod with salt and pepper, then place in the dish and set aside.

In a small saucepan over medium high heat, mix together the lime juice, honey, unseasoned rice vinegar, Lee Kum Kee Panda Brand Sweet Soy Sauce and Lee Kum Kee Minced Ginger. Bring to a boil then reduce to a simmer, and cook until a thick syrup consistency is reached.

Spoon 1 tsp. of glaze over each fillet, reserving the leftover glaze for serving.

Bake in the preheated oven until the fish is cooked through and opaque, about 12 minutes.

Serve over your favorite vegetables and garnish with sesame seeds.
