Preheat oven to 400°F. Heat a large cast iron skillet to medium heat and add in olive oil. When the oil has heated up, add in Lee Kum Kee Minced Ginger and Garlic and cook down for 2 minutes.
Next, add in the coconut milk, curry powder, Lee Kum Kee Chiu Chow Style Chili Oil and stir together until powder is mixed in.
Submerge the chicken drumsticks a little in the sauce mix, followed by a few pieces of fresh basil.
Place skillet into the oven and bake for 1 hour until the chicken is golden and cooked through.
Top with fresh chopped cilantro and serve with a side of white rice and lime wedges.
