This cheesy Korean fire chicken recipe hits all the right flavor notes. Sriracha, oyster sauce, soy sauce, and gochujang combine with chicken and cheese for an explosion of flavors.
The Lee Kum Kee sauces pull a lot of the weight in this recipe. Sriracha adds heat and a garlicky kick, while Panda Brand Oyster Sauce and Premium Soy Sauce combine for depth and umami. Together with the gochujang, the result is sweet and spicy with a backdrop of umami to add layers of flavor. Combined with the chicken and balanced with creamy mozzarella cheese, this is an easy one-pan meal that you'll want to keep making!
In a bowl, combine the chicken with Lee Kum Kee Sriracha Chili Sauce, Lee Kum Kee Panda Brand Oyster Flavored Sauce, Lee Kum Kee Pure Sesame Oil, Lee Kum Kee Premium Soy Sauce, Lee Kum Kee Minced Garlic, gochujang, sugar, black pepper, and water. Mix until the chicken is well coated in the thick marinade.
Heat a cast iron skillet over medium-high heat. Add the chicken and all the sauce. Cook for 8–10 minutes, stirring occasionally, until the chicken is fully cooked and the sauce has thickened into a glossy coating.
Turn off the heat and evenly sprinkle mozzarella over the chicken. Broil for 2–3 minutes until the cheese is melted, stretchy, and bubbling.
Remove from the broiler and top with sliced scallions. Serve immediately in the skillet with white rice and kimchi on the side.
