A Hawaiian version of legendary char siu buns, this baked manapua recipe is comforting, sweet, and savory all in one!

 

Manapua is Hawaii's version of Char Siu Bao, which can be prepared either steamed or baked. This baked version results in a golden brown crust and a richer, sweeter bun that is perfect with the savory flavors of the char siu pork inside. 

 

This recipe will show you how to make the bun dough from scratch, as well as showcase how to use Lee Kum Kee sauces like Hoisin Sauce and Oyster Sauce to make your own char siu marinade for the pork. It's a labor of love, but the results will be well worth the effort!

How to make it

  1. In a bowl, mix Lee Kum Kee Hoisin Sauce, Panda Brand Oyster Sauce, Premium Soy Sauce, honey, Shaoxing wine, five spice powder, Pure Sesame Oil, Minced Garlic, and food coloring (if using). Coat the pork evenly and marinate in the fridge for at least 1 hour or overnight.

  2. Make the dough while the char siu marinates. If marinating overnight, do this step just before you begin roasting in Step 3.

     

    In a large bowl, combine warm milk, water, yeast, and sugar. Let sit 5–10 minutes until frothy. Add oil, salt, and flour. Knead 8–10 minutes until smooth and elastic. Cover and let rise in a warm place for 1 hour or until doubled in size.

  3. Preheat oven to 400°F. Place marinated pork on a foil-lined rack over a baking tray. Roast 20 minutes, flip, baste with leftover marinade, and roast another 10–15 minutes until glossy and caramelized. Let rest 10 minutes, then finely dice.

  4. Pour any leftover marinade and pan drippings into a small saucepan. Simmer over medium heat until thickened slightly into a glaze. Stir in diced char siu pork and toss until coated and saucy. Set aside to cool.
  5. Punch down dough and divide into 10 pieces. Roll each into a ball, then flatten into a circle. Place a spoonful of saucy char siu filling in the center. Gather edges and pinch to seal, placing buns seam-side down on a parchment-lined tray. Proof 30 minutes. 
  6. Preheat oven to 350°F, brush buns with egg wash, and bake 18–20 minutes until golden and shiny. These are best enjoyed warm, fresh from the oven!
