Line a large baking sheet with parchment paper. Boil potatoes whole until fork tender, drain and cool. When cool enough to handle, cut potatoes in half lengthwise and carefully scoop out flesh, leaving a ¼-inch border and the skin intact.

Preheat oven to 400°F. Place skins on prepared baking sheet.

In a small bowl, combine the Lee Kum Kee Panda Brand Cooking Soy Sauce, chives, Lee Kum Kee Minced Garlic, Lee Kum Kee Hoisin Sauce and melted butter.

Brush the mixture on both sides of the potatoes and roast for 10 minutes, skin side up. Flip and roast for additional 5 minutes. Remove from oven, top with cheese and broil until cheese is golden and melted.

Drizzle with Lee Kum Kee Sriracha Mayo Dressing/ Spread (Cage-Free Eggs) and garnish with chopped chives. Enjoy!
