Add the watermelon, cucumber, red onion, Lee Kum Kee Minced Garlic, and jalapeño to a blender. Blend until smooth.

Mix in the vinegar and salt. Cover and chill the gazpacho for 30 minutes, then serve with bean sprouts, red onion, cilantro and jalapeno slices, to taste. Enjoy!
