In a small bowl, combine the lime juice, orange juice, Lee Kum Kee Panda Brand Cooking Soy Sauce, granulated sugar and red chili pepper. Stir until the sugar dissolves. Then mix in the green onion.
Heat a pan over medium high heat. Add in the vegetable oil. Season the scallops with the salt. Add the scallops to the pan and sear for 2-3 minutes on each side until golden brown and fully cooked through. Remove the scallops from the pan and place them into a shallow dish.
Mix the chopped peanuts into the sauce then pour it over the scallops. Enjoy!
