What better way to power through a quick lunch than with a tofu power bowl recipe? Power bowls are known to be energizing, filling, and packed with tons of flavor, and this version with a hoisin glaze is no exception.
At the core of every power bowl is a few key components: Grain, protein, fresh veggies, and a dressing to bring it all together. For the grain, we've got quinoa. For the protein, we've got tofu glazed in Lee Kum Kee Hoisin Sauce. There's plenty of fresh veggies as well, and everything is finished off with a final dressing of Hoisin Sauce to add some sweetness and umami.
Perfect for meal prep, this power bowl packs tons of flavor and can be ready in less than 30 minutes!
Cook the tofu by heating vegetable oil in a pan over medium heat. Add tofu cubes and cook until golden brown on all sides, about 5 minutes.
Glaze the tofu by adding 2 tbsp Lee Kum Kee Hoisin Sauce and tossing to coat. Cook for 1-2 minutes until caramelized, then remove from heat.
Assemble the bowls by dividing quinoa and mixed greens among four bowls. Add the toppings by arranging carrots, red cabbage, cucumber, avocado, edamame, and hoisin-glazed tofu over the base.
Drizzle with the remaining 1 tbsp of Lee Kum Kee Hoisin Sauce before serving. Enjoy!
