Dice the cucumber and place into a mixing bowl along with the green onion and red chili.
Add in the lime juice, Lee Kum Kee Lime Cilantro Flavored Hoisin Sauce and mix.
Place a spoonful of the mixture onto a white ramen spoon, then top with a cooked shrimp, a few sprinkles of crushed peanuts and cilantro. Make as many as you can with the remaining mixture and shrimp. Serve and enjoy.
