What You Will Need

Ingredients

  • 1 whole chicken
  • 1 whole onion, chopped
  • 1 stalk celery, chopped
  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. capers, rinsed
  • 10 pcs. green olives, whole with pits
  • 3/4 cup almonds, lightly toasted

Seasoning

  • 1 pinch salt and pepper
  • 1/2 cup Panda Brand Sweet & Sour Sauce

How to make it

  1. Remove all the skin and trim the fat from the chicken.
  2. Cut the chicken into 8 small pieces, using both the breast and the thighs.
  3. Season with salt and pepper.
  4. In a baking dish, place chicken pieces, onion, celery and bake for 15 minutes at 400 degrees F.
  5. Add in remainder ingredients and bake for 20-25 minutes. Serve hot.
