Add the cornstarch and water to a small bowl. Whisk until combined and all the cornstarch has been incorporated. Add the brown sugar, balsamic vinegar, and Lee Kum Kee Panda Brand Premium Cooking Soy Sauce to a sauce pot. Mix to combine then heat it over medium heat until it comes to a boil and the sugar has dissolved.

Stir the cornstarch and water mixture again then pour it into the pot. Mix to combine. Decrease the heat to low and simmer the mixture for about 3 minutes until the sauce thickens enough to coat the back of a spoon. Remove the pot from heat and set it aside to cool to room temperature.

Add the mixed greens, watermelon, strawberries, cucumber, basil leaves, and feta to a large bowl. Gently toss to combine. Drizzle olive oil and the prepared soy balsamic glazed over top. Sprinkle the pistachios on top. Enjoy!
