How to make it

  1. Prepare the cucumbers: Wash and dry cucumbers and trim the ends. Place cucumber between 2 chopsticks. Cut one side at a 45-degree angle. Flip the cucumber over and cut at a straight/90-degree angle.
  2. Sprinkle salt over cucumbers and gently massage into them. Let cucumbers soak in salt for 5 minutes (no more than 10 minutes or they will break down). Rinse with cold water at least 3-4 times to completely remove the salt. Strain and set aside.
  3. Meanwhile, combine all the sauce ingredients in a separate bowl and mix thoroughly.
  4. Pour sauce over cucumbers and gently mix. Top with more sesame seeds. Enjoy!
