Preheat oven to 375ºF.

Oil the pan, then cook down the onions for 10 minutes until soft. Toss in the baby spinach and let that cook down for 1-2 minutes, set aside when done.

In a bowl, mix the eggs, milk, rosemary, salt, pepper and Lee Kum Kee Panda Brand Cooking Soy Sauce. Add in the sliced beets, cooked onion and goat cheese, then gently mix together.

Add that mixture into the pie crust, then place in the oven to bake for 50 minutes.

Take out and finish it with grated parmesan and place back in the oven for another 2 minutes.

Remove from heat and let rest for 10 minutes before cutting into it. Serve and enjoy.
