This easy method to making your own spicy pickles recipe at home involves a simple spicy brine, made with the Lee Kum Kee chili sauces to add layers of heat, depth, and complexity to the pickles. Aromatics like fresh dill and black peppercorns accentuate the pickle's salty, spicy, and acidic flavors, making these the perfect add on to anything you are making this summer. Sandwiches, burgers, or even lemonade are enhanced with this simple sidekick. 

 

TIP: This recipe takes 10 minutes to prepare, but please let sit in the fridge at least overnight for the pickling to occur. They are best enjoyed within a month of pickling as long as they are stored in the fridge.

How to make it

  1. Make the brine: in a small saucepan, combine the vinegar, water, sugar, salt, Lee Kum Kee Sriracha Chili Sauce and Lee Kum Kee Chili Garlic Sauce.
  2. Bring the mixture to a simmer over medium heat, stirring to dissolve the sugar and salt. Simmer for 3-5 minutes then remove from heat.
  3. Place the sliced cucumbers, fresh dill, and black peppercorns in a clean glass jar.Make sure to use a wide-mouthed jar with an airtight lid that can be sealed. Pack the jars tightly!
  4. Carefully pour the warm brine over the cucumbers until fully covered. Let it cool slightly before sealing and refrigerate overnight before opening and using. Enjoy!
