How to make it
Preheat oven to 375ºF. Line or spray baking tray and set aside.
Cut the ends of the zucchinis and slice in half long ways. Using a spoon, hollow out the middles, leaving a small layer with enough space for filling.
Once they are all hollowed out into little boats, place onto the baking tray.
Fill boats with diced tomato, corn, black beans and then top with shredded cheese.
Place into the oven and bake for 20 minutes until zucchini is soft and the cheese is nice and melted.
Take out and top with Lee Kum Kee Lime Cilantro Flavored Hoisin Sauce, chopped cilantro and pepper to taste.
