How to make it
Prepare the chicken for cooking. Add 2 Tbsp. of rice wine over the dried goji berries and set aside to soak.
Take a soup pot and bring to a medium-high heat. Add the chicken (skin side down), stir-fry some ginger slices in oil for 1 minute.
Once the chicken is sizzling and the ginger slices are slightly brown on the edges, reduce the heat to medium and add 2 Tbsp. of Lee Kum Kee Premium Pure Sesame Oil.
After 2-3 minutes – or when the surface of the chicken is slightly brown – pour in 1 ½ cup of rice wine. If the chicken is not fully submerged, add water. Bring the pot to a boil and leave to simmer for 25 minutes with the lid on.
Add the soaked goji berries and any remaining rice wine in the bowl. Also add in another 1 Tbsp. of Lee Kum Kee Premium Pure Sesame Oil, and Lee Kum Kee Premium Bouillon Powder Flavored with Chicken. Place the lid on the pot and leave to simmer for another 5 minutes at low heat. Serve while hot.
