Preheat the oven to 450˚F. Line a baking sheet with aluminum foil and spray with cooking spray.

Place a potato onto a cutting board horizontally. Put one wooden chopstick up against the top of the potato and another against the bottom of the potato. Slice ⅛ inch thick slices into the potato. The chopsticks will prevent you from cutting all the way through the potato. Repeat step 2 for the remaining potatoes.

Place the potatoes onto the prepared baking sheet.

In a small bowl, mix together the vegetable oil and butter. Use pastry brush to brush the oil and butter mixture onto the potatoes and in between the slices. Season the potatoes with salt and pepper.

Bake the potatoes in the oven for 50-60 minutes or until the potatoes are cooked through. Remove the potatoes from the oven. Use a pastry brush to brush the potatoes with Lee Kum Kee Pure Sesame Oil, making sure to get in between the slices.

Place the potatoes back into the oven for 3-5 minutes. Remove the potatoes from the oven. Garnish them with a sprinkling of chopped bacon and sliced green onions. Enjoy!
