1 medium sweet potato, peeled and cut into 1" chunks
1 small red onion, cut into 1" wedges
1 lemon, sliced into thin rounds
2 Tbsp. olive oil
1 Tbsp. thyme (fresh or dried)
Seasoning
Kosher salt and freshly ground black pepper, to taste
¼ cup Lee Kum Kee Lemon Pepper Sauce
How to make it
Heat oven to 425°F. Combine, potatoes, carrots, sweet potatoes, onion, and lemon in a large bowl and toss with olive oil, thyme, and a pinch of salt and pepper.
Pour Lee Kum Kee Panda Brand Lemon Pepper Grilling & Dipping Sauce over the vegetables, and toss until evenly coated.
Distribute evenly onto a lined baking sheet and bake, making sure to stir vegetables halfway through cooking, until golden brown and tender, about 30 minutes.
