Roasted Garlic Mashed Sweet Potatoes

How to make it

  1. Preheat oven to 400°F and then line a baking sheet with foil. 
  2. Place sweet potatoes onto the tray and stab with a fork to create air holes. 
  3. Roast for 35-40 minutes until fork tender then take out. 
  4. Once cooled, remove the skin and place into a food processor along with 4 roasted garlic cloves, Lee Kum Kee Panda Brand Premium Cooking Soy Sauce, coconut oil, honey and sea salt. Blend for 10 seconds until creamy, but not too creamy. 
  5. Spoon into a bowl and garnish with fresh thyme and ground black pepper and butter.
