Preheat oven to 400°F and then line a baking sheet with foil.
Place sweet potatoes onto the tray and stab with a fork to create air holes.
Roast for 35-40 minutes until fork tender then take out.
Once cooled, remove the skin and place into a food processor along with 4 roasted garlic cloves, Lee Kum Kee Panda Brand Premium Cooking Soy Sauce, coconut oil, honey and sea salt. Blend for 10 seconds until creamy, but not too creamy.
Spoon into a bowl and garnish with fresh thyme and ground black pepper and butter.
