Add the mirin, water, Lee Kum Kee Panda Brand Cooking Soy Sauce, Lee Kum Kee Panda Brand Mushroom Flavored Dark Soy Sauce, Lee Kum Kee Panda Brand Sweet Soy Sauce, cayenne pepper, garlic, and star anise into a sauce pot. Heat it over medium to medium high heat and bring the mixture to a simmer. Once it begins to simmer, remove the pot from the heat and allow it to cool to room temperature.
Fill a pot with water and add a pinch of salt. Bring the water to a boil over high heat with the lid on then lower the heat to medium so that the water is gently bubbling.
Gently lower the eggs into the water and place the lid back on. Cook them for 6 ½ minutes. Remove the eggs from the water and transfer them into a bowl of ice water. Allow them to cool for a few minutes.
Peel the eggs and place them into an airtight container with the marinade. Allow the eggs to marinate for at least 2 hours. They can be marinated for up to 24 hours. Enjoy!
