Place chicken into the slow cooker along with ketchup, BBQ sauce, Lee Kum Kee Panda Brand Cooking Soy Sauce, apple cider vinegar, mustard, cumin, and cayenne pepper. Make sure the chicken is covered well in sauce mixture. Set slow cooker to low heat and cook for 6 hours.
When the chicken is ready and extremely tender, take it out and shred it apart with forks, then place back into the slow cooker, and toss to marinate in sauce.
Make sandwiches by placing some pulled chicken onto the bun and topping with coleslaw.
