Preheat the oven to 450˚F. Line a baking tray with aluminum foil. In a large bowl, mix together the taco seasoning, olive oil, lime juice, and Lee Kum Kee Panda Brand Mushroom Flavored Dark Soy Sauce.

Add the portobello mushrooms, red onion, red bell peppers, orange bell peppers, and yellow bell peppers to the bowl along with salt and pepper to taste. Toss the vegetable together with the marinade until evenly coated.

Spread the vegetable out onto the prepared baking sheet. Bake for 20 minutes.

Serve with corn tortillas, salsa, and cotija cheese. Enjoy!
