How to make it

  1. Preheat oven to 350° F.
  2. In a bowl, whisk together the brown sugar, sugar, coconut oil, Lee Kum Kee Panda Brand Sweet Soy Sauce and eggs. 
  3. Stir in the baking soda, cinnamon, nutmeg, salt and flour with the wet ingredients. Then add in the pumpkin puree and the coconut milk and mix together well. 
  4. Using a rubber spatula, scoop out the batter into the 9x5 greased loaf pan. 
  5. In a small bowl, mix the pecans with 1 Tbsp. of brown sugar and butter, pressing together with your fingers. Add that to the top of the batter, then place in the oven and bake for 55 minutes, until the center comes out dry. 
  6. Let cool then cut and serve.
