Mix minced pork with Marinade. Combine pork, green onion, and coriander to form filling. Mix cornstarch with water, add to eggs with Seasoning Mix, beat well.
Heat oil in a skillet over medium heat. Pour 2 Tbsp. egg mixture and place pork filling just off center.
Fold egg sheet in half while still soft. Seal in pork filling by slightly pressing edges. Pan-fry over low heat until both sides are golden. Repeat until all ingredients are used. Serve with more XO sauce if desired.
