Whether it be potluck night, gameday eats, or a quick summertime snack, this nacho loaded potato skins recipe will make you the MVP of your kitchen. It's easy to make, packed with tons of flavor, and can be made in bulk so everyone can customize to their liking! 

 

The core of the flavor starts with a base of Lee Kum Kee Chili Garlic Sauce. It combines with the ground beef, beans, and cheese to give a spicy and savory kick to the whole recipe. From there, add toppings of choice like tomatoes, olives, sour cream, and green onion, and you've got a wonderfully balanced and composed bite in every potato skin! Don't forget to add extra Chili Garlic Sauce for heat if desired.

How to make it

  1. Preheat oven to 400° Fahrenheit. Line a baking sheet with parchment paper. Scrub the small potatoes clean, then pierce each with a fork. Toss with olive oil, salt, black pepper, and smoked paprika.

     

    Arrange potatoes on the baking sheet and bake for 20 minutes, or until fork-tender. Let cool slightly.

  2. Cut each potato in half lengthwise. Carefully scoop out some of the centers, leaving about ¼ inch of potato flesh inside. Place skins cut-side up on the baking sheet and bake for 10 minutes to crisp up.
  3. Sprinkle most of the shredded cheese inside each potato skin, reserving some for the top. In a small bowl, mix ground beef with Lee Kum Kee Chili Garlic Sauce and black beans. Spoon the mixture evenly over the cheese.
  4. Top with remaining shredded cheese and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
  5. Top with diced tomatoes, black olives and a drizzle of sour cream. Garnish with additional Lee Kum Kee Chili Garlic Sauce and sliced green onion. Serve immediately and enjoy!
