Boil the udon noodles according to the package directions then drain and set aside for later.

Heat a pan over high heat then add in the vegetable oil. Add the beef to the pan and season with salt and pepper. Cook for about 3 minutes until cooked through. Remove the beef from the pan and set it aside for later.

In the same pan, melt 2 Tbsp. of the butter over medium high heat. Add the chopped kimchi and gochujang. Cook until the kimchi slightly softens and begins to brown.

Pour in the kimchi juice, chicken broth, and Lee Kum Kee Panda Brand Sauce for Broccoli Beef. Bring the sauce to a simmer and cook until it slightly reduces, about 3 minutes.

Add the udon to the pan along with the beef and remaining 3 Tbsp. of butter. Cook and toss the noodles together with the sauce until evenly coated, about 2 minutes. Season with salt and pepper to taste.

Serve with a fried egg and garnish with shredded nori and sliced green onions. Enjoy!
