How to make it

  1. Make the dressing. In a blender or in a small bowl with a whisk, combine Lee Kum Kee Panda Brand Sweet Soy Sauce, lime juice, dijon mustard, olive oil, salt and pepper. Blend or whisk until well combined. 
  2. Combine the kale, cabbage, radishes, chickpeas, quinoa, cilantro, feta, and toasted pumpkin seeds in a big bowl. 
  3. Toss all ingredients with the dressing and mix until all the kale is coated. Top with avocado and extra feta.
