Looking for a jianbing recipe but don't have the equipment to make it at home? Try this easy recipe hack instead, featuring a scallion pancake!

 

A traditional jianbing recipe consists of a thin crepe batter that is fried fresh, coated in beaten egg and sauces, and served with a variety of fillings. The crepe batter and cooking technique require a special pan and brush, so if you don't have those or access to a jianbing restaurant nearby, this scallion pancake recipe hack version can serve as an easy substitute.

 

What it doesn't skimp on is the flavor, and that's thanks to the sauces that go inside the jianbing. A blend of Lee Kum Kee Hoisin Sauce and Chiu Chow Style Chili Crisp Oil adds sweet, savory, umami, and spicy flavors, all of which are perfect for whatever fillings you add inside! This version adds chicken, cucumber, wonton strips, and cilantro, but you could also add sausage, cheese, a whole wonton cracker, or you tiao, the savory Chinese donut. The possibilities are endless!

How to make it

  1. Heat the scallion pancake in a dry skillet over medium heat, turning once, until golden brown and crisp. Crack an egg into the center of the pancake and use a spatula to break the yolk and spread evenly to cover the surface. Add sliced green onions and black sesame seeds. Flip the pancake to the other side and reduce heat to low.

  2. Add Lee Kum Kee Hoisin Sauce and Lee Kum Kee Chiu Chow Style Chili Crisp Oil and use the back of a spoon to spread generously throughout the pancake.

  3. Place the crispy wonton chips in the center of the pancake, then add the shredded chicken, cucumber slices and cilantro leaves. Fold the left and right edges of the pancake over the filling, then fold the bottom edge up over the filling and roll toward the top to form a tight wrap. Slice in half to reveal the layers and drizzle with additional Lee Kum Kee Chiu Chow Style Chili Crisp Oil. Serve while hot and crisp.
