How to make it

Place ginger, green onions, and star anise to a pot of water and bring to a boil. Add trotters and cook over medium heat for about 40 minutes, until tender. 
Remove trotters and immerse in ice water until cold. Drain.
Mix trotters with Marinade Mix and marinate for 6–8 hours in a fridge. Drain and serve cold.
