Stir together Lee Kum Kee Lime Cilantro Flavored Hoisin Sauce, 1 Tbsp. oil, and chipotle. Add shrimp and marinate for at least 30 minutes.

Heat a grill or grill pan over medium heat. Line a plate with a clean kitchen towel. Grill tortillas until lightly charred, 1 to 2 minutes per side, then transfer to prepared plate and wrap in the towel to keep warm.

Brush pineapple slices with 1 Tbsp. oil, then grill until lightly charred, 2 to 3 minutes per side. Cool slightly, then cut into bite-sized pieces.

Grill shrimp until pink and cooked through, 3 to 5 minutes on each side.
