Add a spicy twist to the classic Croque Madame Recipe with the addition of the viral chili crisp eggs!

Typically, a croque madame consists of bread, butter, ham, cheese, a bechamel or mornay sauce, and a topping of a fried egg. This recipe has all of those components, but the egg is fried in Lee Kum Kee Chiu Chow Chili Crisp Oil to add layers of complex heat and umami. The chili crisp egg is a flavorful addition to the classic brunch dish that you have to give a try!

How to make it

  1. Make the béchamel sauce by melting butter in a pan over medium heat. Whisk in flour and cook for 1 minute, then slowly whisk in milk until thickened. Remove from heat, stir in half of the Gruyère cheese, and season with salt and black pepper.
  2. Assemble the sandwiches by spreading Dijon mustard on two slices of bread. Layer with ham, then top with a spoonful of béchamel sauce. Cover with the remaining bread slices.
  3. Toast the sandwiches in a pan over medium heat with butter, cooking for 3-4 minutes per side until golden brown and crispy. Top with béchamel and remaining Gruyere cheese and broil in the oven for 2 minutes until bubbly and slightly browned. Transfer to serving plates.
  4. Fry the eggs in Lee Kum Kee Chiu Chow Style Chili Crisp Oil until crispy around the edges. Place one egg on each sandwich, garnish with microgreens and chives and enjoy!
