Bring a pot of salted water to a boil. Add in the fettuccine and cook according to the package instructions. Drain and rinse under cold water.
Melt the butter in a large pan over medium-high heat. Season the salmon with salt and pepper then add it to the pan. Cook for 3-4 minutes or until fully cooked. Remove the salmon from the pan. Pour in the olive oil and allow it to heat. Then add in the shallot and garlic. Sauté for 1-2 minutes.
Reduce the heat to medium and add in the white wine. Let it cook and reduce for 5-7 minutes. Mix in the Lee Kum Kee Panda Brand Oyster Flavored Sauce, heavy cream, spinach, lemon zest, lemon juice, and ¼ teaspoon of salt. Add the pasta to the pans and toss it together with the sauce. Gently add in the salmon and give it a quick mix. Top with parsley and enjoy!
