Place the chicken into a large freezer bag along with the olive oil, Lee Kum Kee Panda Brand Cooking Soy Sauce, pepper, lime juice, lime zest and sliced green onion. Let that marinate for at least two hours in the fridge.

Preheat the oven to 400 degrees F.

Take the chicken out and let come to room temperature before cooking.

Place marinated chicken onto a roasting tray and gently cover with foil. Roast for 30 minutes and then remove the foil and cook for another 45 minutes, until chicken is cooked through. Baste the chicken with marinade often as it cooks.

Garnish chicken with fresh cilantro and serve right away.
