Chorizo Mushroom Frittata

How to make it
Preheat the oven to 350°F.  
In a medium sized bowl, add and beat eggs with salt, pepper, and Lee Kum Kee Chiu Chow Style Chili Oil. Set aside. 
Over medium high heat, add mushrooms to an ovenproof skillet and wait until the water from the mushrooms has evaporated. Add in olive oil and chorizo, cook till browned.
Pour egg mixture over the pan and mix with chorizo and mushroom mix, top with shredded cheese and sprinkle paprika.
Bake for 40-45 minutes until it is set in the center and golden color on top. Slice and enjoy!
