Beat the eggs into a mixture. Cut the Chinese chives into sections, add them to the egg mixture, and mix well. Blanch the shrimp till 70% cooked, add them to the egg mixture, and mix well too.
Add the seasoning. Mix the corn starch with 1 Tbsp. of water and add it to egg mixture.
Heat up a wok and pour oil into it. Add all ingredients to the wok, and flip omelet over to pan-fry until both sides turn golden brown. Ready to serve.
