Place the chicken in a bowl with buttermilk, Lee Kum Kee Minced Garlic, onion powder, smoked paprika, salt, and pepper. Toss to coat and marinate in the fridge for at least 1 hour (or overnight for best flavor).
In a shallow bowl, mix flour, cornstarch, salt, pepper, and cayenne (if using). Heat 1–2 inches of oil in a heavy-bottomed skillet to 350°F. Remove chicken from marinade, dredge in flour mixture, pressing firmly to coat, then fry in batches for 5–7 minutes per side until golden and crispy. Transfer to a wire rack to drain.
While chicken fries, preheat waffle iron. In a bowl, whisk flour, sugar, baking powder, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients until just mixed. Cook waffles according to your waffle iron’s instructions until golden and crisp.
