It's a very simple build, but these sliders pack a ton of flavor thanks to the Lee Kum Kee Honey Sriracha. This sweet and spicy sauce is used in both the chicken marinade and as a finishing sauce over the mini waffle "buns", balancing out the crispy and spicy chicken with its mellow, smooth, and sweet heat. Give it a try for gameday season and watch the crowd go wild!

How to make it

  1. In a large bowl, combine the chicken pieces, buttermilk, Lee Kum Kee Honey Sriracha Sauce, salt, and black pepper. Mix well to coat the chicken thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for maximum flavor.
  2. In a separate shallow dish, combine the all-purpose flour, cornstarch, garlic powder, smoked paprika, and cayenne pepper (if using). Mix well.
  3. Heat about 2 inches of vegetable oil in a deep skillet or heavy pot over medium-high heat until it reaches 350°F.
  4. Remove the marinated chicken from the fridge. Working one piece at a time, dredge the chicken in the flour mixture, pressing gently to coat evenly. Shake off any excess flour. Carefully place the coated chicken pieces into the hot oil, frying in batches to avoid crowding. Fry until the chicken is golden brown and cooked through, about 4-5 minutes per side, depending on thickness. Transfer the fried chicken to a wire rack or paper towel-lined plate to drain excess oil.

  5. Assemble the Sliders: Place a piece of fried chicken on each mini waffle. Drizzle generously with Lee Kum Kee Honey Sriracha Sauce for a sweet and spicy finish. Add pickles on top for a tangy crunch, if desired, and cover with another mini waffle to create the slider.
