Place the potatoes into a large pot. Fill the pot with water so that the water comes about 2 inches over the potatoes. Add in the 1 Tbsp. of salt. Heat the pot over high heat and bring it to a boil. Continue to boil the potatoes until they are tender, about 20-25 minutes.
Drain the potatoes from the water and place them into a large bowl. Roughly mash the potatoes.
Melt the butter in a sauce pot over medium heat. Add in the Lee Kum Kee Minced Garlic and stir until it becomes fragrant. Pour in the milk and bring it to a boil.
When the milk reaches a boil, pour it into the bowl of potatoes. Add in the cream cheese, cheddar cheese, and parmesan, continue to mash and mix the potatoes until they reach the desired consistency. Season with salt and pepper and garnish with chopped parsley. Enjoy!
