Butternut Squash & Soyrizo Tacos

How to make it

  1. Heat pan with a little olive oil. Once hot, add in the pre-cooked and cubed butternut squash and cook for 2 minutes. Once they start to brown and crisp up, add in the soyrizo along with the Lee Kum Kee Lime Cilantro Flavored Hoisin Sauce and cook for 5-7 minutes until soyrizo is cooked through and crispy and well mixed with the squash. 
  2. In the meantime, grill the tortillas and set aside. 
  3. Place the cooked tortillas down onto a plate and add the soyrizo and squash mixture. Top each with crumbled cotija cheese, fresh cilantro and serve tacos with lime wedges, for garnish.
